Zucchini Casserole

Ingredients

  • 1 small onion
  • 1 Zucchini
  • 100 g mushrooms
  • 40 g beef ham
  • 1 tsp Olive oil
  • Pepper (freshly ground)
  • Salt
  • 1 bunch chives (small)
  • 2 large eggs
  • 2 tbsp milk

Instructions

    Peel the onion, halve it and slice into thin strips. Wash, trim, and cut the zucchini into very thin slices. Clean the mushrooms, wipe them dry, and slice or quarter them. Dice the beef ham finely. Preheat the oven to 200 °C.

    Heat the oil in a non-stick pan, then sauté the onion, zucchini, mushrooms, and ham cubes for about 5 minutes while stirring. Season with pepper and salt. Transfer the cooked vegetables into a heatproof dish.

    Wash the chives, shake off excess water, and cut them into small rosettes.

    Whisk together the eggs, milk, salt, pepper, and one tablespoon of chive rosettes until well combined. Pour this mixture over the vegetables in the dish. Bake at 180 °C for 20 to 25 minutes, or until the eggs are set. Sprinkle with the remaining chives before serving.
