Ingredients

  • 4 eggs
  • 500 g quark
  • 200 g Flour
  • Salt
  • 2 zucchinis (≈180-200 g each)
  • pepper (ground)
  • nutmeg
  • fat (for greasing the pan)
  • 4 tbsp basil

Instructions

    Preheat the oven to 200°C with upper and lower heat. Separate the eggs; beat the yolks over a hot, non-boiling water bath until frothy. Remove from heat, let cool slightly, then mix in the quark and sifted flour. Whisk the egg whites with a pinch of salt until stiff peaks form, then fold them into the yolk-quark mixture gradually.

    Wash, trim, halve, seed, and grate the zucchini flesh coarsely. Stir the grated zucchini into the batter, season with salt, pepper, and nutmeg, and pour into a greased loaf pan. Bake in the preheated oven for 45-50 minutes until golden brown; cover with foil if needed. Remove the finished loaf, slice, and serve garnished with basil leaves. Offer tomato sauce on the side as desired.
