Zucchini Couscous

Ingredients

  • 300 g couscous (instant)
  • Salt
  • 150 g green beans
  • 100 g peas (fresh or frozen)
  • 1 yellow zucchini
  • 1 handful mint
  • 0.5 lemon (juice)
  • 2 tbsp white balsamic vinegar
  • 4 tbsp light sesame oil
  • a pinch ground coriander
  • pepper (from the mill)
  • 3 zucchini flowers

Instructions

    Pour about 400 ml boiling salted water over the couscous and let it swell for about 10 minutes, occasionally fluffing with a fork. Rinse, trim, and cut the beans into ~4 cm pieces; blanch in boiling salted water for about 8 minutes. Add peas during the last 2 minutes. Drain and rinse with cold water. Wash, trim, and slice the zucchini into ~1 cm thick sticks. Shake off excess moisture from the mint, dry, and roughly chop.

    Combine the couscous with beans, peas, zucchini, and mint.

    Add lemon juice, vinegar, oil, and coriander. Season with salt and pepper. Transfer to a large salad bowl. Gently wash, pat dry, and garnish the salad with zucchini flowers.
