Zucchini Patties

Ingredients

  • 500 g zucchini
  • Salt
  • 500 g mostly firm potatoes
  • 1 egg
  • 2 tbsp flour
  • Pepper
  • nutmeg
  • 4 tbsp rapeseed oil (for frying)
  • 2 sprigs Mint
  • 250 g yogurt
  • 1 tsp Lime juice

Instructions

    Wash, peel and coarsely grate the zucchini. Salt it and let it sit for about 10 minutes to draw out water. Then squeeze it well. Peel and grate the potatoes. Wrap them in a damp kitchen towel and press to remove excess moisture. Let the vegetable juices sit briefly, then drain so that the released starch remains at the bottom of the bowl. Mix the zucchini and potato with the egg and flour thoroughly. Season with salt, pepper and nutmeg.

    Form small heaps of the mixture into a non‑stick pan with hot oil, press them flat and fry 2–3 minutes until golden brown. Flip and cook another 2–3 minutes until fully done. Fry all patties in batches until golden. Drain on kitchen paper.
