Zucchini Cheese Rolls

The vegetarian zucchini cheese rolls from Spoonsparrow are a hit at every grill party!

Ingredients

  • 2 Zucchini
  • Salt
  • 400 g feta
  • 2 handfuls arugula
  • 150 g sun‑dried tomatoes
  • 2 tbsp olive oil
  • Pepper
  • 4 tbsp balsamic vinegar

Instructions

    Wash, trim and slice the zucchini lengthwise into very thin strips or peel with a vegetable peeler.

    Drain the feta and cut it into sticks about 1 cm thick. Wash, rinse and dry the arugula.

  3. 3.

    Season the zucchini slices with salt and pepper. Place a piece of feta and one or two sun‑dried tomatoes on each slice, add a few arugula leaves, roll up into rolls, secure with a toothpick and brush lightly with olive oil.

    Grill over high heat, turning occasionally, for 5–7 minutes.

    Serve by arranging the rolls on a plate and drizzle with balsamic vinegar.
