Ingredients

  • 4 slender long zucchini
  • 500 g ground beef
  • 1 Garlic clove
  • 2 Tomatoes
  • 1 EL tomato paste
  • 1 pinch hot paprika powder
  • Salt
  • Pepper
  • 70 g grated goat cheese
  • 200 g rice
  • 400 g pizza tomatoes
  • 50 ml white wine
  • 1 pinch chili flakes
  • 1 small onion
  • 1 Garlic clove
  • 2 EL ketchup (for seasoning)
  • 1 EL chopped basil

Instructions

    Preheat the oven to 200°C.

    Wash the zucchini and cut them in half lengthwise. Using a sharp-tipped teaspoon, hollow out the zucchini halves, leaving a thin rim. Chop the zucchini flesh finely afterwards.

    Place the ground beef in a bowl and add 1/4 of the chopped zucchini flesh. Boil the tomatoes, peel, halve, seed, then dice finely. Combine both with tomato paste, paprika powder, salt, and pepper. Spread the mixture onto the zucchini halves and sprinkle with cheese. Transfer to a parchment-lined baking sheet and bake for about 25 minutes. Cook the rice in plenty of salted water according to package instructions. For the sauce, place peeled tomatoes with white wine, chili flakes, and remaining zucchini flesh into a pot and bring to a boil. Finely chop the onion and garlic, add them to the sauce, and season with ketchup.

    Plate the rice with sauce and top with the stuffed zucchini boats, serve immediately.
