Zucchini and Cabbage Salad with Bell Pepper

Ingredients
- 400 g white cabbage
- 1 red bell pepper
- 4 tomatoes
- 2 zucchinis
- 100 g capellini
- 4 tbsp white wine vinegar
- 3 tbsp olive oil
- ground cumin (to taste)
- 100 g feta cheese
- Salt
- freshly ground black pepper
Instructions

Clean the cabbage and finely slice or grate it. Briefly blanch in salted water, then shock in cold water and drain well.

Wash the bell pepper, halve it, remove seeds and white membranes, and dice into small pieces.

Wash the tomatoes, quarter them, remove seeds, and dice similarly.

Wash the zucchinis, peel if desired, and grate finely.

Cook the capellini according to package instructions until al dente. Shock in cold water and drain.

Whisk together olive oil, crumbled feta, and white wine vinegar; combine with vegetables and pasta, season with salt, cumin, and pepper. Let rest for about 15 minutes before serving. Taste and adjust seasoning, then serve with white bread if desired.
