Strawberry pasta salad by Spoonsparrow: Flavonoids from the strawberries capture free radicals and protect body cells.

Ingredients

  • 400 g elbow or fusilli pasta
  • Salt
  • 500 g strawberries
  • 0.5 bunch mint
  • 2 tbsp raspberry vinegar
  • 3 tbsp olive oil
  • 150 g feta cheese
  • black pepper (freshly ground)

Instructions

    Cook the pasta according to package instructions in plenty of boiling salted water until al dente, then drain and let it cool.

    Wash, hull, and cut the strawberries into small pieces; wash the mint, shake dry, and finely chop the leaves.

    Combine vinegar and oil. Gently mix the pasta, strawberries, and mint with the vinaigrette, then fold in crumbled feta. Season the salad with a pinch of salt and pepper to taste before serving.
