Zoodles with Bolognese
Zoodles with Bolognese from Spoonsparrow – the low‑carb version of the popular Italian classic is always a hit!
Ingredients
- 2 Zucchini
- 1 onion
- 1 Garlic clove
- 0.5 bunch basil (10 g)
- 2 tbsp olive oil
- 250 g ground beef
- 1 tbsp tomato paste (15 g)
- 200 g passata
- 1 tsp Dried oregano
- Salt
- Pepper
- 20 g parmesan (30% fat in the dry matter)
Instructions

Clean and wash zucchini, then spiralize into zoodles. Peel and finely dice onion and garlic. Wash basil, shake off excess water, pluck leaves, finely chop half and set aside the rest.

Heat 1 tbsp olive oil in a pan. Sauté onion and garlic over medium heat for 2–3 minutes until translucent. Add ground beef and cook 5–7 minutes until crumbly.

Stir in tomato paste, cook briefly, then add passata. Season with oregano, chopped basil, salt, and pepper. Simmer on low heat for 10 minutes.

In a separate pan, lightly sauté the zoodles in the remaining olive oil for 2–3 minutes over medium heat until warm but still al dente. Season with a pinch of salt.

Arrange the zucchini noodles on plates, spoon the Bolognese sauce over them, grate parmesan on top, and sprinkle with the reserved basil.
