Ingredients

  • 400 g Whole Wheat Spaghetti
  • Salt
  • 6 tomatoes
  • 2 sprigs parsley
  • 4 tbsp olive oil
  • 1 tbsp Lemon Juice
  • 50 ml Vegetable broth
  • Pepper
  • 4 tbsp pine nuts (15 g each)

Instructions

    Cook the spaghetti according to package instructions in plenty of boiling salted water for 9–11 minutes until al dente; then drain in a colander and let it rest.

    Meanwhile, peel, wash, trim stems from the tomatoes and cut them into wedges. Wash the parsley, pat dry, and finely chop. Whisk together olive oil, lemon juice, and vegetable broth, seasoning with salt and pepper. Toast the pine nuts in a hot pan without fat over medium heat for 3 minutes.

    Combine all ingredients for the spaghetti salad in a bowl and divide among containers. Chop the toasted pine nuts and sprinkle them over the salad.
