Ingredients

  • 750 g cod fillet
  • ½ lemon juice
  • 750 g fresh spinach
  • 50 g smoked bacon, diced
  • 1 onion, diced
  • 1 tbsp oil
  • Salt
  • freshly ground pepper
  • 500 g firm potatoes, sliced thin
  • 2 eggs (medium size)
  • 125 g crème fraîche

Instructions

    Rinse the cod fillet, pat dry and rub with lemon juice.

    Wash and roughly chop the spinach. Dice the bacon and onion. Heat oil in a pot, sauté bacon and onion until golden. Add spinach, cover and steam for 3-4 minutes. Season with salt and pepper, then strain through a sieve.

    Peel, wash and slice potatoes thinly. Beat eggs with crème fraîche and season with salt and pepper.

    Layer half the potato slices in a greased baking dish. Spread half the spinach over them. Season cod fillet with salt and pepper and place on top of the spinach. Pour half the egg‑crème mixture over the fish. Add remaining spinach and potatoes, then pour the rest of the egg‑crème mixture on top. Gently tap the baking dish on the counter to let the mixture settle slightly.

    Bake in a preheated oven at 200°C (or 180°C fan) for 40 minutes.
