Yogurt with Apple Compote

Ingredients

  • 1 Vanilla bean
  • 60 g hazelnut kernels (3 tbsp)
  • 3 sour apples (e.g. Granny Smith)
  • 1 tbsp Lemon Juice
  • 2 tbsp apple juice
  • 300 g yogurt (1.5 % fat) (creamy)
  • 2 tbsp acacia honey

Instructions

    Slice the vanilla bean lengthwise and scrape out the seeds. Roughly chop the hazelnuts.

    For the apple compote, peel, quarter, core the apples, and cut into cubes. In a pot add the vanilla seeds, lemon juice, and 3 tbsp water; simmer over medium heat for about 10 minutes until softened, then puree finely and stir in the apple juice. Let cool.

    Meanwhile whisk the yogurt until smooth. Toast the nuts in a dry pan until fragrant. Add honey, lightly caramelize, and let cool briefly.

    Fill four glasses with the apple compote, spread yogurt on top, spoon hazelnuts with honey over it, and refrigerate for 1 hour.
