Ingredients

  • 200 g yogurt
  • 200 g quark
  • 200 ml whipping cream
  • 60 g powdered sugar
  • 20 ml raspberry liqueur
  • 1 tbsp Lemon Juice
  • 2 tbsp raspberry purée
  • 1 Banana
  • 2 Kiwis
  • 4 strawberries
  • 1 slice Galia melon
  • 1 slice cantaloupe melon
  • 4 tbsp rolled oats
  • 1 tbsp cashew nuts
  • powdered sugar (for dusting)

Instructions

    Whisk yogurt with quark and powdered sugar until smooth. Divide the mixture in half. Stir raspberry purée and liqueur into one half. Chill both portions for about 40-50 minutes.

    Meanwhile prepare the fruit: peel and slice the banana, peel and slice the kiwis.

    Wash, trim, and halve the strawberries.

    Peel and cut the melons into cubes.

    Toast cashew nuts in a dry pan without oil.

    Distribute rolled oats over four ice cream cups. Place the yogurt parfait on top and add melon cubes. Then pour in the raspberry parfait and garnish with remaining fruit as desired. Sprinkle nuts over and dust with powdered sugar before serving.
