Yogurt Semolina Squares

Ingredients
- 125 g soft butter
- 4 eggs
- 400 g sugar
- 1 vanilla pod (aroma)
- 2 tsp orange zest
- 500 g semolina
- 2 tsp Baking powder
- 500 g firm yogurt
- 40 ground almonds
- 1 tsp lemon juice
- 100 g chopped pistachios

Preheat the oven to 180°C fan. Grease a deep baking tray with butter.

Beat the butter until fluffy. Add eggs, 100 g sugar, vanilla aroma and orange zest; mix well. Combine semolina with baking powder and fold into the mixture. In a separate bowl mix yogurt with almonds and stir thoroughly. Pour batter into the pan and bake for 40-45 minutes until golden brown. Let cool.

Meanwhile cook the syrup: bring 300 ml water, remaining sugar, and lemon juice to a boil; then let it cool again.

Drizzle the finished semolina cake with all the syrup and allow to set completely. Sprinkle chopped pistachios on top and serve in rectangular slices.
