  • 250 g yogurt
  • 250 g quark
  • 30 g freshly chopped herbs (e.g., parsley, chervil, chives)
  • 2 Garlic cloves
  • Salt
  • 1 tsp lemon zest
  • Pepper (freshly ground)
  • olive oil

Instructions

    Whisk the yogurt with the quark and herbs until smooth. Peel and finely mince the garlic; grate it over a bit of salt using the back of a knife. Mix into the quark and season with salt, lemon zest, and pepper.

    Place the yogurt-quark mixture in a sieve lined with a cloth, press to remove excess liquid, and refrigerate overnight to set.
