Yogurt Ice Cream with Melon

Ingredients
- 500 g natural yogurt
- 50 g sugar
- 2 tbsp vanilla sugar
- 150 ml whipping cream
- 0.5 cantaloupe melon
- 1 tbsp lime juice
- 0.5 tsp lime zest (unprocessed)
- 2 tbsp honey
- 40 g pistachio kernels

Whisk the yogurt with sugar and vanilla sugar. Beat the cream stiff and fold in. Freeze in an ice machine for about 30 minutes until creamy, or place in a bowl and freeze for at least 4 hours, stirring occasionally.

Meanwhile, extract the flesh of the melon and dice it small. Mix with lime juice, zest, and honey. Chop pistachios finely and stir 1 tbsp into the melon mixture.

To serve, fill an ice cream bag with the ice cream. Spray a little ice cream into four glasses, spread the melon salad on top, and spray remaining ice cream over it. Sprinkle with the remaining pistachios and serve immediately.
