Ingredients

  • 300 g yogurt
  • 2 packets vanilla sugar
  • 3 tbsp liquid honey
  • 1 Egg white
  • 300 g blackberries

    Whisk yogurt with 1 packet of vanilla sugar and honey in a metal bowl until smooth. Beat the egg white to stiff peaks and fold it in. Cover and place in the freezer for about 2 hours, stirring occasionally.

    Wash, rinse, and drain the blackberries; reserve some for garnish. Puree the rest and strain through a sieve, sweeten with remaining vanilla sugar, and keep covered in the refrigerator.

    Before serving, let the ice cream sit at room temperature for a few minutes, then stir it with a hand whisk until smooth. Scoop into bowls and serve with blackberry sauce and fresh berries on top.
