Ingredients

  • 150 ml milk
  • 125 g sour cream
  • 50 g quark
  • 350 g yogurt
  • Salt
  • Pepper (freshly ground)
  • 0.5 tsp paprika powder (sweet)
  • 125 g whipping cream
  • 6 g agar-agar
  • 5 tbsp chive rolls
  • 1 tsp Mustard
  • 1 tsp Honey
  • 1 tbsp red wine vinegar
  • 2 tbsp olive oil
  • 2 Spring Onions
  • 2 bunch radishes
  • growing flower buds (for garnish)

Instructions

    Dissolve agar-agar in a little water.

    Whisk sour cream with quark, yogurt, a pinch of salt, pepper and paprika powder, then fold in the chive rolls.

    Soak agar-agar in a small amount of water, bring to a boil and quickly stir into the mixture.

    Beat whipping cream until stiff peaks form and fold it in when the mixture starts to set. Spoon into small molds and refrigerate for several hours.

    Whisk red wine vinegar with mustard, honey, salt, pepper and olive oil.

    Wash and trim spring onions and radishes. Slice spring onion greens into thin rings, cut radishes into rounds, combine both with the sauce.

    For serving briefly place the molds in hot water, then pour onto plates and garnish with radish salad and flower buds. (The mixture should be soft, not firm; use more agar-agar for larger shapes.)
