Yogurt Bomb

Ingredients

  • 500 g plain yogurt (3.5% fat)
  • 3 tbsp honey (15 g each)
  • 1 tbsp Lemon Juice
  • 400 g whipping cream
  • 250 g blueberries
  • 250 g raspberries
  • 30 g pistachio nuts

Instructions

    First whisk the yogurt with honey and lemon juice to combine.

    Beat the cream in a bowl until stiff peaks form, then fold it into the yogurt mixture.

    Line a large sieve with a clean dish towel and place it over a big bowl. Pour the yogurt mixture into the sieve and lay a sheet of plastic wrap directly on top of the yogurt surface.

    Refrigerate the prepared yogurt bomb for at least 12 hours to chill.

    The next day carefully remove the plastic wrap and pour the yogurt bomb onto a large plate. Slowly lift the dish towel. Wash and rinse the berries. Chop the pistachio nuts.

    Decorate the yogurt bomb with raspberries and blueberries, then scatter pistachios on top.
