Yeast Cake

Ingredients
- soft butter (for the pan)
- 10 g fresh yeast
- 250 ml lukewarm milk
- 500 g flour
- 4 tbsp sugar
- 1 tsp salt
- 80 g Butter
- flour (for working)
- 100 g cube sugar
- 200 g crème fraîche
- 1 tsp cinnamon

Grease the cake pan. Dissolve the yeast in the milk. Mix the flour, sugar and salt in a bowl. Add the yeast-milk mixture, sugar and half of the butter and knead into a soft dough. If needed, add more milk and knead further. Cover the dough with a cloth and let it rise to double size for about 1 hour.

Afterwards roll out the dough on a floured surface to fit the pan and place it in the pan. Let it rest covered with a damp cloth for another 15-30 minutes.

Preheat the oven to 200°C (top and bottom heat).

Crush the cube sugar (best with a hammer) roughly. Press some shallow indentations into the dough at regular intervals, fill them with crème fraîche. Sprinkle the crushed sugar and cinnamon on top and scatter the remaining butter in small flakes. Bake in the oven for about 30 minutes.
