Yeast Bread

Ingredients
- 0.5 cube yeast (ca. 21 g)
- 270 g whey
- 1 tsp Honey
- 400 g wheat flour (Type 550)
- 100 g semolina
- 1 tsp ground bread spice
- 1 tbsp salt
- flour (for working)
- semolina (for dusting)
Instructions

Crush the yeast into 125 ml lukewarm whey in a large bowl and dissolve with honey. Add a little flour and let rise for about 20 minutes in a warm place. Add the remaining flour, semolina, leftover whey, spice and salt to the pre‑mix and knead into a smooth dough. If needed, add a bit more lukewarm water. Cover and rest for about 30 minutes in a draft‑free area.

On a floured work surface knead and beat again. Shape into a loaf, place on a semolina‑dusted baking sheet, cover and let rise for another 30 minutes. Preheat the oven to 220 °C fan. Score the dough crosswise, brush with water and dust with semolina. Place an oven‑proof bowl of boiling water in the oven and bake the bread for about 20 minutes. Reduce the temperature to 180 °C and finish baking the semolina loaf for another 30 minutes.
