Ingredients

  • 4 pairs Regensburger sausage
  • 2 large onions
  • 1 bundle radishes
  • 1 yellow bell pepper
  • 4 pickled cucumbers
  • 100 ml pickle brine
  • 50 ml Vegetable broth
  • 6 tbsp white wine vinegar
  • 1 tbsp mustard
  • 2 tbsp oil
  • 0.5 bundle chives
  • 0.5 bundle parsley
  • 1 red chili pepper
  • Salt
  • Pepper

Instructions

    Peel the onions and slice them into thin rings. Heat the vegetable broth and pour it over the onions. Peel the Regensburger sausages, remove their skins, and cut them into thin slices. Wash, trim, halve, seed, peel white skin from the bell pepper, and cut into thin strips. Clean the radishes and together with the pickled cucumbers slice them thinly.

    Wash the herbs, set aside a few sprigs for garnish, finely chop the rest. Whisk vinegar with mustard until smooth, add to the onion broth, also pour in the pickle brine. Wash the chili pepper, cut lengthwise, seed, remove white lining, dice finely, and add to the salad dressing.

    Add sausage, radishes, bell pepper, pickled cucumbers, and herbs to the salad dressing, mix everything together, season with salt and pepper, and let the salad chill in the refrigerator for at least one hour. Before serving stir in the oil, taste again, garnish with parsley, and serve on plates. Offer bread with butter on the side.
