Wok Noodles with Meat and Mushrooms

Ingredients

  • 300 g Asian egg noodles
  • 200 g raw pork belly
  • 1 tbsp plant oil
  • 500 ml beef broth (from the can)
  • 200 g shiitake mushrooms
  • 1 bunch spring onions
  • 2 tbsp dark soy sauce

Instructions

    Cook noodles in boiling water for 4 minutes, drain, rinse with cold water, and let them dry well.

    Wash pork, pat dry, slice thinly. Heat oil in a pot and quickly sear the pork.

    Wash spring onions, trim ends, cut white parts into fine rings and green parts into coarser rings; set aside. Add white onion rings to pork, sauté briefly, pour in beef broth, and simmer on low heat for 20 minutes.

    Clean mushrooms, slice finely, add to broth, and simmer another 10 minutes. Add noodles to the broth, warm through, season with soy sauce, serve in bowls, and garnish with spring onion greens.
