Ingredients
- 400 g rigatoni
- olive oil (cold‑pressed)
- Pepper (freshly ground)
- Salt
- 3 cloves garlic (finely chopped)
- 250 g cocktail tomatoes
- 400 g young spinach
- parmesan

Wash and clean the spinach. Heat 2 tbsp olive oil in a pot and wilt the spinach over medium heat until it shrinks. Drain and roughly chop. Heat 1 tbsp olive oil and sauté the garlic until golden yellow, then add to the spinach and stir. Season with salt and pepper.

Wash and halve the cocktail tomatoes.

Cook the pasta in plenty of salted water until al dente, then drain. Toss the pasta with spinach, cocktail tomatoes, and 3 tbsp olive oil. Season with salt and pepper, sprinkle grated Parmesan on top, and serve immediately.
