Ingredients
- 400 g band pasta
- 400 g veal liver (prepared by butcher)
- 0.5 bunch sage
- 2 onions
- 1 Garlic clove
- 100 ml balsamic vinegar
- 6 tbsp butter
- Salt
- Pepper
- 1 tbsp oil
Instructions

Cook the band pasta according to package instructions in plenty of salted water.

Wash, dry and trim the liver.

Wash sage, shake dry and pluck leaves. Peel garlic and onions, halve and cut into wedges; finely chop garlic.

Heat 2 tbsp butter in a pan and quickly sear the liver with salt and pepper, then remove.

Add remaining butter to the pan, heat, add onion and garlic, sauté briefly, pour in balsamic vinegar and simmer for 2 minutes. Add sage leaves and liver, reduce to low heat.

Drain pasta and sauté in a separate pan with 1 tbsp oil, season with salt and pepper. Plate pasta with liver and sauce and serve.
