Ingredients

  • 350 g Broccoli
  • Salt
  • 30 g Walnuts
  • 2 red onions
  • 1 Garlic clove
  • 20 g Ginger (1 piece; optional)
  • 250 g Chicken breast fillet
  • 2 tbsp Soy sauce
  • 1 tbsp Cornstarch
  • 2 tbsp oil
  • 4 tbsp Oyster sauce
  • Pepper
  • 1 tsp Sambal oelek (optional)

Instructions

  1. 1.

Clean, wash, and drain the broccoli, then cut it into florets. Peel the stem and cut it into approximately 1 cm cubes.

  2. 2.

Pre-cook the broccoli in boiling salted water for about 2 minutes (blanch), drain, and cool in cold water. Drain the broccoli well.

  3. 3.

    Coarsely chop the walnuts.

  4. 4.

Peel the onions and cut them into fine dice. Peel and finely chop or grate the garlic and ginger.

  5. 5.

Rinse the chicken breast, pat it dry, and cut it into fine dice. Mix with soy sauce and cornstarch in a small bowl.

  6. 6.

Heat the oil in a wok (or a large pan). Stir-fry the meat over high heat for 2 minutes. Remove and set aside.

  7. 7.

Add the onions and broccoli to the wok and stir-fry for about 2 minutes.

  8. 8.

Add the walnuts, garlic, and ginger, and fry for another minute, stirring occasionally.

  9. 9.

Mix oyster sauce and 4 tbsp of water, pour over the vegetables, and bring to a boil.

  10. 10.

Add the meat back in and continue cooking for about 2 minutes, stirring occasionally. Season the vegetables and chicken with salt and pepper as desired. For those who like it spicier, add a little Sambal oelek. Serve with rice.
