Wine Soup Terlan Style

A fresh herbaceous wine soup inspired by Terlan tradition. Try this and other recipes from Spoonsparrow!

Ingredients

  • 2 slices toast bread
  • 2 tbsp butter
  • 500 ml meat broth
  • 125 ml dry white wine
  • 3 egg yolks
  • 100 ml whipping cream
  • Salt
  • Nutmeg (freshly grated)
  • chervil leaves (for garnish)

Instructions

    Remove crusts from the bread, dice into small cubes and fry in hot butter until golden brown and crispy. Drain on paper towels.

    Add broth and wine to a pot and bring to a boil. Whisk egg yolks with cream in a bowl and whisk over a double boiler until frothy. Gradually pour in the wine-broth mixture while stirring continuously (do not boil!) until a creamy consistency forms. Season with salt and nutmeg. Serve on soup plates topped with croutons and chervil garnish.
