Algerian-Style Wheat Groats Soup with Lamb

A fresh wheat groat soup featuring lamb, spices and citrus, inspired by Algerian flavors.
Ingredients
- 300 g lamb shoulder (fat, tendons and bones removed)
- 150 ml olive oil
- 1 large onion
- 6 tbsp finely chopped coriander
- 1 tsp salt
- pepper from the mill
- 1 tsp Paprika powder (hot)
- 1 tsp dried mint
- 150 g wheat groats
- 1 tsp tomato paste
- 2 lemons

Slice the lamb into very thin strips. Peel and dice the onion finely. Heat the oil in a large pan, sauté the onion with the lamb until the onions begin to turn golden yellow. Add half of the coriander and 1.5 l water, stir in the wheat groats, and season with salt, pepper, paprika powder and dried mint. Mix the tomato paste with 2 tbsp water and fold it into the soup. Bring to a boil, then cover and simmer on low heat for about 40 minutes.

Taste the soup again, stir in the remaining coriander, and serve with lemon halves or wedges.
