Ingredients
- 2 kg wine garden snail
- 4 l water
- 2 onions (chopped)
- 1 parsley root (grated)
- 1 EL sea salt
- 1 EL crushed black pepper
- 250 ml white wine
- 1 tsp saffron
- 2 EL chopped parsley
- 3 tomatoes (diced)
Instructions

Add all ingredients to a large pot and bring to a boil.

Wash the snails well and simmer in the broth for about 20-25 minutes, skimming foam regularly. Add tomatoes and parsley in the last 5 minutes.

Strain through a sieve into a bowl. Season with salt and pepper and serve.

Remove the snails from their shells using snail claws or lobster picks.
