Christmas Party Bites

Ingredients
- 500 g chicken breast fillet
- 2 tbsp honey
- 2 tsp chili powder
- 1 tbsp lime juice
- Salt
- sesame oil
- 8 wooden skewers
- 50 g glass noodles
- 100 g carrots
- 50 g white cabbage
- 100 g bean sprouts
- 2 cloves garlic
- 100 g ground beef
- Salt
- pepper (ground)
- 2 tsp sugar
- vegetable oil (for frying)
- 16 Wan‑Tan dough sheets
- 1 clove garlic
- 150 g mixed minced meat
- 1 tbsp fish sauce
- 1 l neutral vegetable oil
- 20 slices frozen Wan‑Tan dough
- 200 g crackers (shape as desired)
- 200 g grated cheese (mountain cheese)
- black sesame seeds

Wash the meat, pat dry and cut into small cubes. Skewer 4–5 cubes onto each wooden skewer. Brush the meat with sesame oil and grill in a grill pan until golden brown on both sides. Meanwhile mix honey with 1 tsp sesame oil, salt, chili and lime juice and brush the skewers with this mixture. Keep warm until serving.

Soak the glass noodles for 30 minutes in cold water. Peel and grate the carrots. Finely shred the cabbage. Rinse the bean sprouts and drain well. Mix everything in a bowl. Peel and finely chop the garlic cloves and add them with the ground beef to the vegetables. Drain the noodles, cut into ~4 cm pieces with kitchen scissors and add to the mix. Season with salt, pepper and sugar.

Place 1–2 tbsp of filling in the center of each dough sheet. Brush the edges with water and roll up. Pinch the edges together.

Heat oil in a wok or wide pot. (It’s hot enough when small bubbles rise on the handle of a wooden spoon.) Fry the spring rolls in batches, letting them float, for 4–5 minutes until golden brown. Remove and drain on kitchen paper.

For the Wan‑Tan sachets peel and finely chop garlic, mix with minced meat and fish sauce. Heat oil in a deep fryer or wok, then drop a teaspoon of the meat mixture onto a thawed dough sheet (cut sheets in half if smaller sachets are desired). Brush edges with water, fold corners up and press together to form a sachet. Fry sachets in hot oil for about 2 minutes until golden yellow, drain on kitchen paper.

Place crackers on a baking tray lined with parchment paper, sprinkle each with cheese and sesame seeds, then put the tray under the oven grill. When the cheese melts, remove the tray and let the crackers cool.
