Christmas Salmon Tartare with Scallops

Ingredients
- 200 g salmon fillet (very fresh)
- 1 Shallot
- 2 tbsp grape seed oil
- 1 lime (zest and juice)
- Sea salt
- Pepper (freshly ground)
- 200 g crème fraîche
- 4 tbsp Yogurt
- 0.5 bunch Basil
- 4 scallops
- 1 tbsp butter
- 4 stalks lemongrass
- chili flakes
- lime wedge (for serving)
- 2 slices toast bread

Wash the salmon fillet, pat dry and dice finely. Peel the shallot, finely chop it as well, and mix with half of the lime zest, lime juice, and grape seed oil into the salmon. Season with sea salt and pepper. Remove leaves from the basil, finely chop them, and stir into the crème fraîche and yogurt mixture. Adjust seasoning with salt.

Wash the scallops, pat dry and skewer each onto a lemongrass stalk. Season with salt, pepper, and chili flakes, then sear in hot butter for about 1 minute per side until golden brown.

Fill four glasses with basil cream, arrange the salmon tartare on top, and serve with scallop skewers and lime slices. Optionally garnish the tartare with star-shaped toast pieces.
