Wild Salmon on Mashed Potatoes

Ingredients
- 250 g wild salmon fillet (ready to cook, skinless)
- lime juice
- Salt
- pepper (ground)
- 1 tsp wild fennel seeds
- 300 g waxy potatoes
- 1 tbsp butter
- 75 ml milk
- Nutmeg (freshly grated)
- 1 grapefruit
- olive oil
- dill sprigs (for garnish)

Wash the salmon fillet, pat dry, drizzle with lime juice and season with salt, pepper, and wild fennel seeds.

Soak the wooden plank in cold water for at least 1 hour.

Meanwhile peel, wash, and boil the potatoes in salted water for about 30 minutes. Drain, let steam off, then press through a potato masher. Mix in butter and milk to make a creamy purée, season with salt, pepper, and a pinch of nutmeg; keep warm.

Heat the grill and place the soaked wooden plank on the hot grate until it starts smoking after 4-5 minutes. Place the salmon on the wood and cook covered for 10-14 minutes so that the center remains slightly translucent pink.

Peel the grapefruit, removing the white pith, and separate the fruit segments from the membranes. Squeeze out the remaining juice and whisk 3 tbsp juice with 4-5 tbsp oil. Season with salt and pepper.

Plate the purée on warmed dishes, cut the fish into small squares, place on top, drizzle with grapefruit vinaigrette, and garnish with fruit segments and dill.
