Various Fish Pastes

Ingredients

  • 250 g crab meat (canned or jarred)
  • 1 small onion
  • juice of 1 lemon
  • 1 tbsp chopped parsley
  • 2 tbsp extra virgin olive oil
  • Salt
  • Pepper
  • 5 smoked trout fillets
  • 2 boiled starchy potatoes
  • 1 tbsp grated horseradish
  • 1 tbsp chopped parsley

  • 400 g pre-cooked shrimp
  • 1 tbsp butter
  • 2 Garlic cloves
  • 125 ml white wine
  • 1 tsp crème fraîche
  • Salt
  • Pepper

Instructions

    For the crab paste: Drain the crab meat and finely chop with a large knife. Peel and finely mince the onion. Mix crab, olive oil, lemon juice, onion, salt and pepper; let rest for 15 min before serving.

    For the fish paste: Break apart trout fillets. Peel potatoes and cut into pieces. Mash potatoes and fish in a bowl with a fork until a coarse paste forms. Add horseradish and oil, mix well. Season with salt and pepper. Stir in parsley just before serving.

    For the shrimp: Peel and finely chop garlic. Melt butter in a pan and quickly brown shrimp and garlic in hot butter. Deglaze with white wine. Simmer on medium heat for 2 min until liquid reduces slightly. Remove from heat, stir in crème fraîche. Season with salt and pepper, garnish with basil and serve.
