Vanilla Scallops

Ingredients
- 1 onion
- 1 Garlic clove
- 100 g Celery Root
- 2 tbsp butter
- 2 tbsp flour
- 100 ml dry white wine
- 100 ml Vegetable broth
- 100 ml heavy cream
- 4 vanilla beans
- Salt
- Pepper (freshly ground)
- 12 scallops (prepped)
- 2 tbsp plant oil

Peel the onion, garlic and celery root, dice everything and sauté in a hot pot with butter until translucent. Briefly stir in flour, deglaze with wine and broth, and simmer for several minutes. Add cream and cook about 5 minutes until thickened. Strain through a sieve, add vanilla bean flesh, season with salt and pepper.

Rinse scallops, pat dry, and skewer three on each half of a split vanilla bean. Season with salt and pepper and sear in a hot pan with oil for 2-3 minutes per side until golden brown. Serve with sauce.
