Wild Garlic Spinach and Fried Fish

- 500 g fresh spinach
- 125 g wild garlic leaves
- 1 clove garlic
- 4 wild garlic onions (if available)
- 1 tbsp butter
- 2 tbsp olive oil
- Salt
- ground pepper
- Cayenne pepper
- nutmeg
- 2 tsp lemon juice
- 4 pre-cooked fish fillets about 160 g each (e.g., from red drum)

Clean, wash and drain the spinach. Wash the wild garlic and roughly chop it. Peel the garlic and press through a press. Remove the translucent skins of the wild garlic onions and finely slice if desired.

Heat butter and olive oil in a pot, lightly sauté the wild garlic onions and garlic. Add the spinach and wild garlic, cover and cook for about 4 minutes until wilted, seasoning with salt, pepper, cayenne pepper, nutmeg, and lemon juice.

Season fish fillets with salt and pepper, dust with flour, and fry in a pan with hot oil-butter mixture for 2-3 minutes per side.

Serve the wild garlic spinach and fried fish on warmed plates.
