Ingredients

  • 1 clove garlic
  • 3 tomatoes
  • 1 tbsp Olive Oil
  • 1 tbsp Apple cider vinegar
  • Salt
  • Pepper
  • sugar
  • a handful arugula
  • 4 sirloin steaks (about 150 g each)
  • 2 tbsp plant oil
  • 12 slices breakfast bacon
  • 4 burger buns
  • 100 g goat soft cheese
  • 4 tbsp aioli (jar)

Instructions

    Peel and finely chop the garlic. Blanch the tomatoes, peel, core, and dice the flesh small. Heat the oil in a small pot, add the garlic and sauté. Add the tomatoes, vinegar, salt, pepper, and a touch of sugar. Simmer gently for about 10 minutes. Taste and let cool.

    Wash and dry the arugula.

    Preheat the oven to 100°C (212°F) on both top and bottom heat.

    Pat the steaks dry. In hot oil, sear each side for about 1 minute. Season with salt and finish in the preheated oven for 15-25 minutes depending on preference. Fry the bacon slices in a pan until crisp, then drain on paper towels.

    Halve the buns and toast them in the oven for a few minutes. Slice the goat cheese into four pieces and spread the underside of the hot buns with it. Place one steak on each bun, top with bacon slices, add some arugula leaves and tomato confit, and finish with 1 tbsp aioli. Top with the other half of the bun and secure with a skewer if desired. Serve with pickles and French fries.
