- 50 g Pine nuts
- 80 g sunflower seeds
- 2 handfuls wild garlic
- 1 handful nettle tips
- 150 ml olive oil
- 50 g freshly grated Parmesan
- Salt
- Pepper (freshly ground)
- Lemon juice
- 150 g crème fraîche
Instructions

Roast the pine nuts and sunflower seeds separately in a hot pan without fat. Remove and set aside. Wash the leaves, shake off excess water, and blend them with the pine nuts in a blender.

Gradually add oil until a smooth pesto forms. Stir in Parmesan and season with salt, pepper, and a splash of lemon juice. Fold in sunflower seeds and optionally enhance the pesto with crème fraîche.
