Avocado Pesto

The creamy avocado pesto from Spoonsparrow shines with plenty of vitamin E, protecting our cells from free radicals.
Ingredients
- 2 tbsp pine nuts (30 g)
- 1 ripe Avocado
- 5 g Basil (1 handful)
- 3 tbsp Lemon juice
- Salt
- Pepper
- chili flakes
Instructions

Toast the pine nuts in a hot, dry pan over medium heat for 3 minutes.

Halve the avocado, remove the pit, loosen the flesh from the skin, cut it into small pieces and place it in a tall glass.

Wash the basil, pat it dry, then add it with the pine nuts and lemon juice to the avocado. Blend with 3 tbsp water using an immersion blender until smooth. Season the avocado pesto with salt, pepper, and chili flakes.
