Wild Garlic Mashed Potatoes

Spoonsparrow’s wild garlic mashed potatoes are always wonderfully tasty.

Ingredients

  • 600 g potatoes (starchy, boiling type)
  • 150 g wild garlic
  • 120 ml milk
  • 50 ml heavy cream
  • 20 g butter
  • Salt
  • freshly grated nutmeg
  • wild garlic leaves (for garnish)

Instructions

    Wash the potatoes and steam them in their skins for about 30 minutes. Peel, press through a potato ricer, and mix with hot milk and cold butter to create a smooth purée. Add cream until the purée is silky but not too liquid.

    Wash, dry, pat, strip stems from wild garlic leaves, and finely chop. Fold into the purée, season with salt and nutmeg, and use a spoon to place small balls on the wild garlic leaves for garnish.

    Pairs wonderfully with fish or lamb dishes.
