Radish Salad

A fresh vegetable salad featuring radishes, spring onions, arugula, sunflower seeds, and goat cheese.

Ingredients

  • 4 tbsp sunflower seeds
  • 2 bunches radishes
  • 1 bunch spring onions
  • 1 bunch arugula
  • juice of ½ lemon
  • Salt
  • Pepper
  • 2 tbsp olive oil
  • 100 g goat cheese
  • 2 tbsp capers

Instructions

    Roast the sunflower seeds in a non-stick pan and transfer to a plate.

    Rinse, trim, and slice the radishes. Trim and finely chop the spring onions. Rinse, trim, and optionally cut the arugula into smaller pieces.

    Whisk together lemon juice, salt, pepper, and olive oil. Toss the prepared vegetables with this dressing and arrange on a platter.

    Crumble the goat cheese over the salad and sprinkle capers on top.
