Ingredients
- 50 g Wild garlic (1 bunch)
- 2 tbsp olive oil
- Salt
- 250 g butter (room temperature)
- black pepper

Wash the wild garlic, pat dry, roughly chop and blend with olive oil and salt using a stick blender until coarse.

Whisk the butter with a hand whisk until fluffy. Add the wild garlic mixture and season with pepper. Whisk to a homogeneous paste and transfer into a clean jar. The butter stays fresh in the refrigerator for 1–2 weeks.
