Harzer Cheese Salad

A refined apple‑juice dressing turns this light version of Handkäs mit Musik into a delightful dish thanks to radish and other touches.
Ingredients
- 100 ml cloudy apple juice
- 1 tbsp mustard seeds
- 1 tsp cane sugar
- 2 tbsp Apple cider vinegar
- ½ tsp salt
- Pepper
- 2 Tbsp cold‑pressed rapeseed oil
- 200 g radish (1 piece)
- 2 small red onions
- 300 g Harzer cheese
- 1 bunch chives
- 2 leaves lettuce (optional)
Instructions

Boil apple juice, mustard seeds, sugar, vinegar and salt in a pot. Reduce by about half over high heat.

Season with pepper, whisk the oil into the sauce, then let it cool.

Wash, peel and slice radish into very thin rounds; peel onions and cut into fine rings (or use a vegetable peeler).

Slice the cheese and combine with radish and onions in a bowl. Fold in the cooled sauce and let everything marinate for 10 minutes.

Meanwhile wash chives, dry and cut into small curls. Sprinkle over the salad. Garnish with lettuce leaves if desired and serve.
