- 125 g butter
- 100 g brown sugar
- 2 Tbsp beet syrup
- 1 pinch salt
- 1 egg
- 220 g flour
- 1 tsp Baking powder
- 1 tsp cinnamon
- 15 dried apple rings
- 100 ml cloudy apple juice
- 175 g whipping cream
- 1 packet stabilizer
- 1 tsp powdered sugar
- 1 tsp cinnamon
- 1 tbsp yogurt

Preheat the oven to 180°C (356°F) with fan and top heat. Beat the butter, brown sugar, beet syrup, and salt until fluffy, then fold in the egg. Mix flour, baking powder, and cinnamon together. Chop or finely dice the apple rings into very small pieces. Stir the flour mixture, apple pieces, and apple juice into the batter. Drop 24 dough dollops onto a parchment-lined tray and bake for 12-15 minutes until golden. Remove and cool.

Whip the cream to half‑stiff peaks. Mix the stabilizer with powdered sugar and cinnamon, then fold into the cream until firm. Stir in the yogurt. Spread half of the pies with the cream mixture; place the remaining pies on top as lids.
