Ingredients

  • 125 g soft butter
  • 1 egg
  • 50 g fruit sugar
  • 50 g ground hazelnuts
  • 200 g Whole Wheat Flour
  • 1 tsp Baking powder
  • a pinch of ground cloves
  • a pinch of ground cinnamon
  • 80 g currant jam
  • 1 tbsp fruit sugar

Instructions

    Put the butter in a bowl and beat until fluffy. Add the egg, fruit sugar, ground nuts, flour, baking powder and spices; mix into a firm dough and knead briefly on a floured surface with your hands. Wrap the dough in cling film and refrigerate for 1 hour.

    Roll out the dough on a floured surface to about 3–4 mm thickness. Cut diamond‑shaped cookies with a serrated edge. Place them on a baking sheet lined with parchment paper and bake in a preheated oven at 180 °C (middle rack) for about 12 minutes until golden brown. Remove, lift off the sheet and set on a cooling rack.

    While still hot, spread a little jam on the underside of one cookie and press another onto it. Let cool on the rack. Sift the remaining fruit sugar over the cookies.
