Ingredients

  • 150 ml dry red wine
  • 1 packet mulled wine spice
  • 75 g gelatin sugar (2:1)
  • 2 tbsp lemon juice
  • 200 g Flour
  • 100 g sugar
  • 1 sachet vanilla sugar
  • 200 g butter
  • 1 egg
  • 100 g ground hazelnuts
  • powdered sugar (for dusting)

Instructions

  1. 1.

Heat the red wine (do not boil), add the mulled wine spice and let it steep for 20 minutes. Remove the spice packet, add the gelatin sugar and lemon juice to the wine and simmer while stirring occasionally for 4 minutes. Perform a gelatin test and allow the mixture to cool while stirring occasionally. Combine the flour with the sugar, vanilla sugar, butter in pieces, egg and ground hazelnuts into a shortcrust dough, shape the dough into a ball and wrap it in cling film; chill for 30 minutes.

  2. 2.

Preheat the oven to 180°C (convection). Roll out the dough on a floured surface to about 0.5 cm thickness and cut out cookies of various sizes with a star-shaped cutter. For some cookies, cut smaller stars from the center. Place all cookies on a baking sheet lined with parchment paper and bake in the preheated oven for about 10 minutes. Remove and cool on a wire rack. Warm the mulled wine jam slightly, brush the cookies with it and cover each with a matching star. Dust with powdered sugar.
