Whole Wheat Wraps with Ham and Vegetables

Ingredients
- 200 g whole wheat flour (and a little extra for the work surface)
- Salt
- 200 g small zucchini (1 small zucchini)
- 2 Tomatoes
- 4 lettuce leaves (e.g., romaine)
- 60 g cheddar cheese (1 block)
- 1 Red Onion
- 1 tbsp Lemon Juice
- 3 tbsp olive oil
- Tabasco
- Pepper
- 100 g cooked ham (4 slices)
Instructions

Mix the flour with a pinch of salt and 125 ml lukewarm water to make the dough; knead until smooth and no longer sticky. Cover and let rest for about 15 minutes.

Meanwhile, wash, trim, and slice the zucchini into thin rounds. Blanch the tomatoes in boiling water, drain, shock, peel, quarter, seed, and cut into strips. Wash and dry the lettuce leaves. Grate the cheese coarsely. Peel and slice the onion into strips.

For the vinaigrette whisk together lemon juice, olive oil, a few dashes of Tabasco, salt, and pepper.

Divide the dough into four equal pieces and roll each into a circle about 20 cm in diameter on lightly floured surface. Cook each flatbread in a greased pan over medium heat for 1 minute per side.

Top each flatbread with lettuce, cooked ham, tomato strips, cheese, onion, and zucchini. Drizzle with vinaigrette, roll up, and cut crosswise into halves.
