Whole Wheat Plum Cake

Ingredients
- 200 ml lukewarm milk
- 400 g whole wheat flour
- 1 cube fresh yeast (42 g)
- 50 g sugar
- 1 egg
- 50 g softened butter
- 2 kg dried plums (pitted)
- 180 g butter
- 100 g flour
- 180 g sugar
- 100 g ground walnuts

In a bowl crumble the yeast and dissolve it with a little milk, stir in 2 tbsp flour and cover for about 30 minutes. Sift the remaining flour onto the work surface, make a small well and pour the pre‑mix there; quickly combine with sugar, the rest of the milk, egg and butter into a smooth dough. Transfer the dough to a bowl and let rise in a warm place for at least 1 hour until doubled.

Melt the butter over low heat, let cool. Mix flour, sugar and walnuts, add the butter and work by hand into crumbly streusel.

Knead the yeast dough on lightly floured surface, roll it out and lay on a greased baking tray. Spread the baked plums over it. Cover and let rise in a warm place for 15 minutes.

Sprinkle the streusel over the plums and bake in a preheated oven at 200 °C (middle rack) for about 35 minutes.
