Ingredients

  • 1 yellow bell pepper
  • 1 box watercress
  • 300 g cream cheese (plain)
  • Salt
  • ground pepper
  • 8 slices Whole Grain Sandwich Bread
  • 4 slices pumpernickel
  • 4 slices cheddar

Instructions

    Wash the bell pepper, halve it, remove seeds and slice into thin strips. Trim, wash, and drain the watercress well. Season the cream cheese with salt and ground pepper. Spread cream cheese on the sandwich and pumpernickel slices; top half of each sandwich slice with a cheddar slice, some bell pepper strips, a few watercress leaves, and a pumpernickel slice.

    Spread remaining cream cheese on top of the pumpernickel, add more watercress and bell pepper strips, then place the second sandwich slice on top. Cut diagonally and serve.
