Bavarian Bread Soup

Ingredients
- 150 g stale farmer's bread
- 60 g Butter
- 1 large onion
- 1 clove garlic
- 1 tbsp flour
- 800 ml meat broth
- 250 ml light beer
- 2 egg yolks
- 3 tbsp whipping cream
- Salt
- Pepper (freshly ground)
- nutmeg
- 2 slices farmer's bread
- 50 g butter
- 2 tbsp chopped chives

Cut the stale bread into small pieces and fry them in butter until golden brown. Peel and finely chop the onion and garlic, add to the pan and sauté briefly. Dust everything with flour and slowly pour in the broth and beer while stirring. Bring to a boil and simmer for about 20 minutes. Then puree the soup. Whisk the egg yolks with cream until smooth, stir into the hot soup, do not bring back to a boil, and season with salt, pepper and nutmeg.

Meanwhile, remove crusts from bread, cut into small cubes, and toast them in hot melted butter. Ladle the soup into deep bowls and garnish with chives and toasted bread cubes before serving.
