Ingredients
- 50 g frozen peas
- 1 red bell pepper
- 2 tbsp corn kernels (canned)
- juice of 1 lemon
- salt (ground)
- pepper (ground)
- 2 tsp Olive oil
- 1 tomato
- 250 g crumbly cream cheese
- 4 whole grain rolls
- a few basil leaves (for garnish)
Instructions

Let peas thaw. Quarter the bell pepper, clean, rinse and dice small. Mix lemon juice, salt, pepper and olive oil. Combine peas with pepper and corn.

Rinse tomato and slice into rounds. Briefly rinse salad leaves and pat dry with paper towel.

Season cream cheese with salt and pepper to taste.

Cut rolls in half. Top lower halves with salad and tomato slices. Spread cream cheese on top and pile the peppered pea mixture over it. Garnish with basil. Place upper halves back on top.
